Production area

Like Chablis appellation, the main bedrock comes from the Jurassic epoch, or more precisely the Kimmeridgean age (150 million years ago). The 34 hectares of the Mont de Milieu “umbrella” vineyard are located on the right bank of the River Serein in the communes of Fleys and Fyé. It enjoys a geographical situation comparable to those of the grand crus and its south/south-east aspect guarantee extremely good sunshine.

Origins

The term "Mont de Milieu" refers to an ancient separation between Burgundy and Champagne, still symbolized today by a stone milestone erected at the top of the hill.

Varietal

100% Chardonnay

Tasting notes

Elegant pale gold colour.
Complex nose offering notes of white flowers and fruits (peach).
Unctuous mouth with an aromas of yellow fruits and hazelnut aromas. The finish is long, rich and almost saline.

Vinification and maturing

- Long pneumatic pressing.
- Static cold settling of the musts.
- Alcoholic fermentation started in stainless-steel, then, after 3 days, racking of around 35% from the juices which were placed in fine-grained barrels. For the other part (65%) the fermentation lasted 10 days in temperature-controlled vats (18-20ºC) to preserve a maximum fruit.
- 100% malolactic fermentation.
- ageing on lees during 12 months.

Food and wine pairing

Will be the perfect companion to grilled king prawns (gambas), fried scallops, veal dishes or a rosted guinea fowl.

Serving suggestions

Ideal served at a temperature of 14°C.

Ageing potential

From 5 to 10 years.

Vintage : 2017

2017, a happy combination of quality and quantity.
This is the only region that enjoyed this rare combination. And yet the vegetative cycle was upset: The winter was very cold and there were early frosts in spring. Conditions were optimal for rapid flowering, but there was hail and the drought in the summer.
Harvesting was very early, starting in the August heat. After years of low yields, the grapes were abundant with thick skins that promised lovely color. There were significant disparities in terms of maturity between the whites and reds and between the Côte de Nuits and the Côte de Beaune. But excellent health and easy vinification meant a great vintage for those who got their planning right.
