Production area

Like Chablis appellation, the main bedrock comes from the Jurassic epoch, or more precisely the Kimmeridgean age (150 million years ago). Located in the commune of La Chapelle- Vaulpelteigne, just to the north of the hillside containing all of the Grands Crus, this is a jewel among the Premiers Crus.
Due to its international reputation, the wines from the subparcels is often sold under the Fourchaume name. In fact, Fourchaume is one of the "Climats porte drapeau" (flag-bearer climates) grouping together those of L'Homme Mort, Vaulorent, Côte de Fontenay and Vaupulent.

Vinification and maturing

The grapes or the must come from purchase contracts. The juice is delicately extracted by a long pneumatic pressing. That ensure a juice of hight quality thanks to homogeneous extraction, safeguarding grapes integrity. Then it’s settled by natural decanting, also called static clarification. Alcohol fermentation is carried out in a stainless steel tanks under controlled temperatures (18 to 20°C) to preserve the fineness and the freshness of the Chardonnay. Once malolactic fermentation is complete, the wine is matured in stainless steel vats, partly in oak barrels, for 10 months on the lees, with light stirring to add fatness and complexity.
