Production area
The grapes for this village appellation were harvested within the delimited areas of 17 villages including the village of Chablis. This appellation covers a surface area of 3 367,28 hectares, making it Burgundy’s largest AOC. Our Chablis comes from the marly terroirs of Courgis to the south of Chablis.
Origins
Chablis' vineyards are completely set apart from the rest of Burgundy, giving them characteristics that are utterly distinctive. The unique terroir made of exogyrious marls originates from the Kimmeridgian era: it’s made of small oysters [exogyra virgula] that lived there when the sea covered the area and fossilized when the sea withdrew. It gives the wines their minerality and sharpness.

Tasting notes
COLOR: Pale gold with green highlights.
NOSE: Fresh, lively and mineral, the nose opens with aromas of white-fleshed fruit, citrus, white flowers, butter and spices.
PALATE: The wine is of perfect finesse, with a unique and easily recognizable personality.
Vinification and maturing
Our cuvée is made from grapes or grape must sourced from our partner growers—talented winegrowers who respect their terroir. Our Chablis is then vinified in our cellars with the same care as all our other wines. The juice is first gently extracted by pneumatic pressing, ensuring excellent quality through even extraction while preserving the integrity of the grapes.
Food and wine pairing
This wine will perfectly emphasize any type of sea food such as a fatty fish (salmon or bluefin tuna), sushi and sashimi. Will also be a great companion to poultry, asian or exotic food. Try it also with goat cheeses, as well as fresh and light refined cheese.
Serving suggestions
Ideally serve between 12 and 14°C / 54-57°F.
Ageing potential
Generally speaking, it is preferable to drink Chablis wines in their youth so as to best appreciate their distinctive freshness, but they may be aged for 3 to 4 years.
Vintage : 2025
The 2025 vintage is shaping up to be promising in Chablis, with a profile clearly distinct from 2024, marked by significantly drier conditions. A warm summer, including an intense heatwave, enhanced berry concentration while briefly slowing physiological ripeness. Timely late-August rainfall revived vine activity and supported the progression of phenolic maturity. Harvest began as early as August 27, confirming a notably early vintage. With juicy grapes and vibrant freshness, 2025 stands out as a vintage of character, calling for precise, parcel-by-parcel winemaking to fully express each terroir.
