Production area

The grapes for this village appellation were harvested within the delimited areas of 17 villages including the village of Chablis. This appellation covers a surface area of 3 367,28 hectares, making it Burgundy’s largest AOC. Our Chablis comes from the marly terroirs of Courgis to the south of Chablis.

Origins

Chablis' vineyards are completely set apart from the rest of Burgundy, giving them characteristics that are utterly distinctive. The unique terroir made of exogyrious marls originates from the Kimmeridgian era: it’s made of small oysters [exogyra virgula] that lived there when the sea covered the area and fossilized when the sea withdrew. It gives the wines their minerality and sharpness.

100% Chardonnay

Tasting notes

The nose is open on aromas of peach and apricot. All supported by a lightly toasted note that comes directly from the limestone origins of this wine. The palate is greedy and lively. We find yellow fruits and some aromas of white flowers. The smoothness is persistent and is accompanied by a beautiful minerality.

Vinification and maturing

Harvest: September 13, 2019, the grapes and must are pressed for a long time in a pneumatic press. The fermentation starts in thermoregulated stainless steel vats at a temperature between 18 ° and 20 ° C. The malolactic fermentation is carried out at 100%, then the wine is aged for 10 months on fine lees. This gives the wine this creamy texture and the intense nose of fresh fruit that we love so much!
Bottling: light fining with bentonite, 1 single filtration before bottling.

Food and wine pairing

Perfect with oysters, fish, poultry, some types of exotic cuisine (japanese, indian) and goat cheeses.

The magic of years ending with a "9"!
2019 was a unique and very changeable year. It brought its own stresse, while harvesting passed without a hitch. The end result has inspired enthusiasm. The weather was hot and dry, but the wines are promising a freshness and gourmandise. Only downside, clearly limited quantities White wines are characterized by wonderful aromatic purity and fantastic balance. The vigor underpins a fine richness in the mouth. The red wines are looking truly elegant, with smooth tannins and lovely vigor. Distinctly fruity flavors bring a certain indulgence. The 2019 vintage is coming into being and promising a wonderful harmony.
