Tasting notes

Colour: Pale gold colour.
Nose: Floral fragrances mixed with citrus fruit aromas, white pear and toast notes. Hint of minerality.
Palate: Complex and well-balanced. Taut and tight. Elegant minerality with a well-integrated acidity. Refreshing aftertaste and long finish.

Vinification and maturing

The grapes were hand-picked and sorted manually as soon as they arrived at the winery. They were then pressed in a pneumatic press which allows for perfect extraction of the juices without over pressing the grapes. Vinification and ageing in oak barrels took place with a proportion of 25% new barrels. The wine is aged on the lees for 12 to 15 months without stirring to accentuate the mineral side of the wine.

Food and wine pairing

This wine will be perfect paired with refined dishes such "foie gras", seafood, fish and goat's cheese.
