Production area
South of the Côte Chalonnaise, the Montagny appellation has comprised four villages (Buxy, Montagny-lès-Buxy, Jully-lès-Buxy and Saint-Vallerin) since 1936. A land of wine and stone, it produces only Chardonnay, renowned for its freshness and purity. This appellation comprises 49 Climats classified as Premier Cru.
Origins
Between 250 and 400 metres above sea level, the Bajocian hillsides facing east and south-east offer an ideal terroir combining marl, limestone and Triassic sandstone. In Buxy, this ancient Triassic formation meets the Kimmeridgian, the famous geological formation of Chablis wines.

Tasting notes
COLOUR: Beautiful pale gold colour with bright highlights.
NOSE: Delicate, with floral notes (acacia, hawthorn) and white fruit.
PALATE: Lively and fresh attack, supported by mineral tension, followed by subtle oakiness that brings roundness and length.
Vinification and maturing
Vinification is carried out en masse in temperature-controlled stainless steel vats, preserving the aromatic purity. At the end of fermentation, the wine is transferred to oak barrels, 20% of which are new, for ten months of ageing on fine lees, without bâtonnage. Complete malolactic fermentation brings balance and roundness. The wine is then clarified by fining and lightly filtered before bottling, ensuring finesse and clarity.

Enjoy with risottos, roast poultry or poultry in sauce, seafood, creamy fish and cheeses such as Bleu de Bresse, Comté and goat's cheese.
