Production area
Saint-Aubin is a village appellation in the Côte de Beaune, knowns for its prestigious dry, long-keeping white wines, as well as some very fine red wines. Saint-Aubin's vineyards are planted on various south, south-east, south-west and north-east facing ridges. Its slopes are fairly steep, especially those adjoining the Puligny-Montrachet vineyards.
Origins
Vines planted on clay-limestone slopes with excellent exposure. The vineyard, 40 to 50 years old, has a millerandage phenomenon, guaranteeing greater concentration and aromatic complexity.

100% Chardonnay
Tasting notes
COLOR: Pale yellow, clear and brilliant.
NOSE: Delicate aromas of white flowers, accompanied by light fruity touches and subtle woody notes reminiscent of toast.
PALATE: The attack is fresh, carried by fine acidity. The whole is harmoniously balanced between mineral tension and roundness, with a mellow woodiness resulting from ageing. The finish is long and expressive.
Vinification and maturing
Hand-harvested on September 14, 2023, the grapes underwent a rapid start to alcoholic fermentation in temperature-controlled stainless steel tanks.
Three-quarters of the way through fermentation, the wine was gravity-fed into oak barrels (30% of which were new) for 8 months' ageing on lees, without stirring. It then spent a further month in vats.
After racking and blending in stainless steel tanks, light fining and gentle filtration were carried out before bottling in July 2024.
Food and wine pairing
ts nobility and distinction derives from a subtle balance between elegant freshness and a rich but not excessive unctuousness which gives it great fluidity in the mouth. With a wine like this, firm-textured fish and grilled or steamed crustaceans would be at ease. It would also make a perfect finishing touch to dense-fleshed poultry.

Vintage : 2023
The 2023 vintage has been disrupted by a capricious wather all along the year. Despite a warm winter, an unstable spring, and a summer marked by heat pics, cool weather and stormy showers, this vintage offered Burgundy an abundant and gourmet harvest as well as fruity and expressive wines.
