Production area

Saint-Aubin is a village appellation in the Côte de Beaune, knowns for its prestigious dry, long-keeping white wines, as well as some very fine red wines. Saint-Aubin's vineyards are planted on various south, south-east, south-west and north-east facing ridges. Its slopes are fairly steep, especially those adjoining the Puligny-Montrachet vineyards.

Origins

The vines, 40-50 years old, are planted on clay-limestone soil. They are planted mainly on the right-hand side of the wide combe that winds its way up to La Rochepot. The Hameau de Gamay has given its name to this Premier Cru.

COLOR: Luminous pale yellow, announcing a fresh, elegant wine.
NOSE:An expressive bouquet of fresh fruit, subtly enhanced by mellow woody notes with delicate toasty accents.
PALATE: A lively, precise attack, supported by fine minerality and balanced acidity. The mellow woodiness adds roundness, for a fine, elegant wine with a fresh, harmonious finish.

Vinification and maturing

Hand-harvested on September 8, 2023, the grapes underwent a rapid start to alcoholic fermentation in temperature-controlled stainless steel tanks. Three-quarters of the way through fermentation, the wine was gravity-fed into oak barrels (30% to 40% of which were new) for 8 months' ageing on lees, without stirring. It then spent a further month in vats. After racking and blending in stainless steel tanks, light fining and gentle filtration were carried out before bottling in July 2024.

Food and wine pairing

Poultry, firm-textured fish and grilled or steamed crustaceans would be at ease. For the cheese board, prefer fresh cheeses like goat cheese, Brillat-Savarin or Délice de Pommard.

The 2023 vintage has been disrupted by a capricious wather all along the year. Despite a warm winter, an unstable spring, and a summer marked by heat pics, cool weather and stormy showers, this vintage offered Burgundy an abundant and gourmet harvest as well as fruity and expressive wines.
