Production area

Saint-Aubin is a village appellation in the Côte de Beaune. With its prestigious Premiers Crus, Saint-Aubin hold a place among the Great Wines. The area of appellation covers 112,95 ha for white grapes (of which 83,79 ha are Premier Cru).

Origins

The vines are mainly planted on the right flack of the wide coomb which snakes its way up towards La Rochepot. The appellation area is spread over two different hill ranges: one is the Montagne de Savoie, which delimits the end of the Côte d’Or, and the other is the Montagne du Ban perpendicular to it. It is on the second of these hills that sur Gamay sits: and it has to be admitted that wines from this lieu-dit are very close in quality to a Puligny or a Chassagne. No fewer than 65 ha are rated as Premier Cru.

Varietal

100% Chardonnay

Vinification and maturing

The grapes in this vineyard were hand-picked and sorted as soon as they arrived in the winery. They were then pressed in a pneumatic press during 2 hours which allows for optimum extraction of the juice without damaging the fruit. Vinification and ageing took place in oak barrels using 15% new oak with occasional stirring.
