SAINT-ROMAIN 2015

Production area

Saint-Romain is a village appellation in the Côte de Beaune. The area of appellation covers 97,16 ha of which 59,74 ha are white grapes and 37,42 ha are red. Though it is located at the foot of a high cliff, Saint-Romain sits high up. This was one of the first places where the Celts and Gallo-Romans planted vines in Burgundy.

Origins

This vineyard is situated on a slope, taking advantage of its gentle incline and excellent soils. Within this marl and limestone terrain, clayey plots are particularly well suited to Chardonnay. The vines, aged between 40 and 50 years, face south to south-east, at altitudes ranging from approximately 280 to 400 meters.

Tasting notes

COLOUR: Pale yellow with golden highlights.
NOSE: Slightly toasted citrus aromas.
PALATE: Gorgeous minerality and elegant flavours are accentuated by the oak barrel ageing.

Vinification and maturing

The grapes in this vineyard were hand-picked and sorted as soon as they arrived in the winery. They were then pressed in a pneumatic press which allows for optimum extraction of the juice without damaging the fruit. Vinification and ageing took place in oak barrels using 20% new oak. The wine was aged on the lees for 14 months with occasional stirring. It was then racked and blended in stainless steel tanks where it remained for another 2 to 3 months to complete the ageing process.

Food and wine pairing

Perfect with white meats and poultry in light sauce, veal and cheeses like Brillat-Savarin and Cîteaux.

Vintage : 2015

2015 was an excellent vintage in Burgundy. Ideal weather-conditions, perfectly healthy, fully-ripe grapes ; all the necessary conditions were present to make an exceptional vintage. After a fairly mild winter, springtime came rapidly with relatively high temperatures and fine sunshine. Thanks to these mild conditions, flowering occurred in early June followed by the veraison in mid-July leading to certain grapes in Southern Burgundy being harvested as early as late August. The only difficulty was drought which led to a fall in yields, especially for Pinot Noir. White Burgundies show a fine intensity with full aromatic qualities. Generous wines which represent the sunny conditions. Red Burgundies are rich and dense, showing aromas of ripe fruit and spices. Pleasing, well-rounded wines which show off all the qualities of this fine vintage.
