Production area

Saint-Romain is a village appellation in the Côte de Beaune. The area of appellation covers 97,16 ha of which 59,74 ha are white grapes and 37,42 ha are red. Though it is located at the foot of a high cliff, Saint-Romain sits high up. This was one of the first places where the Celts and Gallo-Romans planted vines in Burgundy.

Origins

The vineyards are planted on the gentle slope where the vines thrive in excellent soils. The combination of marls and limestone layered with clay are perfect for cultivating the Chardonnay grape. The vines face south/south-east at altitudes of between approximately 280 and 400 metres.

Gorgeous minerality and elegant flavours are accentuated by the oak barrel ageing.

Vinification and maturing

The grapes in this vineyard were hand-picked and sorted as soon as they arrived in the winery. They were then pressed in a pneumatic press which allows for optimum extraction of the juice without damaging the fruit. Vinification and ageing took place in oak barrels using 20% new oak. The wine was aged on the lees for 14 months with occasional stirring. It was then racked and blended in stainless steel tanks where it remained for another 2 to 3 months to complete the ageing process.

Food and wine pairing

Perfect with white meats and poultry in light sauce, veal and cheeses like Brillat-Savarin and Cîteaux.

Quality and quantity for an exceptional vintage!
After a very mild winter, perhaps too mild, this vintage was marked by two contrasting periods. The spring was sunny and milk, with no frost, although there were some localized storms with significant episodes of hail that hit certain plots hard on the Côte de Nuits in June. Then the summer was very dry and very hot, blocking the ripening process in some areas. the harvest began with the Côte de Beaune whites at the end of August. Harvesting was early and was exceptionally abundant. The wonderfully healthy crop promised great potential for producing highly sophisticated wines.
