Production area

Saint-Romain is a village appellation in the Côte de Beaune. The area of appellation covers 97,16 ha of which 59,74 ha are white grapes and 37,42 ha are red. Though it is located at the foot of a high cliff, Saint-Romain sits high up. This was one of the first places where the Celts and Gallo-Romans planted vines in Burgundy.

Origins

This vineyard is situated on a slope, taking advantage of its gentle incline and excellent soils. Within this marl and limestone terrain, clayey plots are particularly well suited to Chardonnay. The vines, aged between 40 and 50 years, face south to south-east, at altitudes ranging from approximately 280 to 400 meters.

Tasting notes

COLOR: Bright pale yellow.
NOSE: A delicate bouquet with floral and fruity notes.
PALATE: A fine balance between freshness and acidity on one side, and roundness with a subtle touch of sweetness brought by oak aging on the other.

Vinification and maturing

The grapes were hand-harvested September 9, 2025, then carefully sorted to retain only the finest bunches. They were then gently pressed using a pneumatic press, ensuring a precise and delicate extraction of the juice while preserving the integrity of the fruit. Vinification took place in temperature-controlled stainless steel tanks, followed by gravity filling into barrels at the end of alcoholic fermentation. The wine was then aged for 9 months on fine lees, without bâtonnage, in oak barrels — including 25% new oak — complemented by 20% acacia barrels, before being further refined for one month in stainless steel tanks. Clarification and filtration were carried out prior to bottling in July 2026.

Food and wine pairing

Perfect with white meats and poultry in light sauce, veal and cheeses like Brillat-Savarin and Cîteaux.

In Burgundy, the 2025 vintage was shaped by summer drought and uneven ripening across parcels. The early harvest brought in healthy, concentrated grapes, producing wines that are both fresh and well-balanced. Reminiscent of the great “vintages ending in 5,” the reds promise elegance and depth, while the whites combine richness and freshness. A highly promising vintage.
